The board you leave out. Twelve by nine inches is enough for a lemon, a shallot, a sandwich,
or the small prep that makes up most of the cutting anyone actually does — and it fits beside the sink
without taking the counter hostage.
Hard maple is pale, tight-grained, and kind to knife edges. The edges are eased just enough to be
comfortable to pick up, and both faces are usable, so you can keep one for produce and one for everything
else.
Hand wash and dry upright. Oil occasionally. It will develop a warm patina rather than staying showroom
pale, which is the point.
