End grain rather than edge grain, which is the difference between a board that dulls your knife
and one that lets the edge sink slightly and close behind it. It is more work to make and it lasts
considerably longer.
The juice groove runs the full perimeter and is deep enough to actually hold what comes off a roast rather
than overflowing at the first corner. Recessed grips are cut into both short sides so you can lift eighteen
inches of loaded walnut without hunting for an edge.
Walnut is naturally dense and closes over knife marks well. Oil it when it starts looking dry — a few
times in the first month, then whenever it asks. Never put it in the dishwasher, and do not let it sit wet.
Roughly 18 by 13 by 1.5 inches. Substantial: it will not move while you work.
