Steel rather than glass, because a canister that lives on an open shelf gets knocked, and
because light is not kind to flour, coffee, or anything else you are storing in bulk.
The lid seats on a silicone gasket and seals with a firm press — enough to keep humidity out, not so
much that you need two hands and a grudge to open it. Powder-coated inside and out in a matte cream that does
not show fingerprints.
Tall holds roughly two quarts, which is a standard bag of coffee beans or most of a bag of flour. Hand
wash the body; the gasket lifts out for cleaning.
